The Taco Rice Casserole, made without beef, is delicious and makes a great freezer meal. It can be made ahead for a quick family dinner or to feed a crowd. How to Make Freezer Taco Rice Casserole


We all love taco night, but sometimes we need a heartier meal. With growing kids and busy schedules, I need a dish that combines the deliciousness of tacos with a filling casserole loaded with carbs and protein. Over the years, we have perfected this dish. With fewer than 10 simple ingredients, it's quick to prepare for freezing or baking.


To prepare this dish, start by browning ground turkey and chopped onions. After draining any grease, add taco seasoning and water, and allow it to cool. In a large mixing bowl, combine two cans of diced tomatoes with green chilies, Tofutti dairy-free sour cream (or regular sour cream), ground turkey, rice, corn, black beans, and Daiya dairy-free Mozzarella Shreds (or Mexican Style Shredded Cheese if the dish doesn’t need to be dairy free). Pour the mixture into two greased 9x13-inch pans and top with remaining cheese and chopped green onions.
