    • Pour in 12 tablespoons (168g) melted and cooled unsalted butter. Mix until well combined. The mixture will be thick. If it seems too loose or warm, chill briefly. Set the topping aside.

*   In a large bowl, place 2 pounds fresh peaches (about 8 peaches), pitted and cut into ¾-inch cubes.
*   Add ½ cup (100g) granulated sugar, 2 tablespoons (18g) cornstarch, ⅛ teaspoon kosher salt, ½ teaspoon ground cinnamon, ⅛ teaspoon freshly grated nutmeg (optional), and 1 teaspoon pure vanilla extract.
*   Mix gently but thoroughly to coat the peaches completely in the dry ingredients.
