- 150g unsmoked streaky bacon

- 120ml double cream
- 3 large eggs
- 40ml milk
- Black pepper

- Preheat your oven to 180°C (350°F) and lightly grease a 24cm (9.5 inch) loose-bottomed tart tin.
Preparing the Onion
- Finely dice the onions and cook in a frying pan over low heat for about 10 minutes, until softened and translucent. Set aside to cool while you prepare the pastry.
Rolling Out the Gluten-Free Pastry
- Place a 30cm (12 inch) piece of cling film onto your work surface and dust generously with gluten-free flour.
- Place the chilled gluten-free shortcrust pastry dough on top of the cling film and cover with a sheet of greaseproof paper.

- Place the tart tin into the preheated oven and blind bake for 10 minutes at 180°C (350°F).
